Burrata Pasta

Burrata Pasta with tomatoes sauce is a dish that perfectly captures the essence of Italian cuisine – simple ingredients, rich flavors, and a touch of indulgence. Ingredients for 4 people:

  • Paccheri or Mezzi Rigatoni Pasta 500gr

  • Burrata 250gr

  • Tomatoes 350gr

  • Fresh basil 8 leaves

  • EVO oil

  • Salt

  • Garlic 1 clove

  • Parmigiano Reggiano cheese

Start removing the Burrata from the fridge, so it comes to room temperature. Then, put water to boil, adding 1-2 tablespoons of salt. 

In the meantime, make the Italian pasta sauce by adding olive oil and peeled garlic clove to a saucepan and sauté for a few minutes on medium heat. Add the tomatoes and slights smash them with a wooden spoon. Add half a cup of pasta water which is almost reaching its boiling point, season with pepper and basil leaves and simmer with the lid on for 10 minutes on a medium heat. 

Allow the sauce to cool down for about 5 minutes, then blend until smooth in a blender. After that, pour it back into the pan. When the water is boiling, throw the Paccheri or Mezzi Rigatoni in and cook it “al dente”, according to packet instructions. 

When fully cooked, drain the pasta while saving around 3 tablespoons of its water. Add them both straight to the sauce pan with parmesan cheese. Stir to combine until the sauce is thick and creamy. To serve, place the creamy pasta into 4 plates, divide the burrata into 4 and position it on top of the pasta. Season with some olive oil, basil leaves and red pepper flakes if you like and enjoy!
