Grilled Tuna Fillets with Sun-dried Tomato and Olive Tapenade

Grilled Tuna Fillets with Sun-dried Tomato and Olive Tapenade is a vibrant dish that captures the bold flavors of the Mediterranean. Originating from the coastal regions of Italy and France, tapenade is a traditional versatile spread made with olives, capers and anchovies, but this version highlights the rich, tangy sweetness of sun-dried tomatoes and the briny depth of pitted green olives. Ingredients:

  • Tuna fillets in olive oil 150gr

  • Sun-dried tomatoes 150gr

  • Pitted green olives 100gr

  • Garlic, oil and chilli pepper sauce 1/2 teaspoons

  • (Optional) Fresh parsley

  • Lemon juice

  • EVO oil

Start by draining the sun-dried tomatoes and pitted green olives from their oils and brine. In a food processor or a blender, combine the sun-dried tomatoes, green olives and the teaspoons garlic, oil and chilli pepper sauce. Pulse until you get a coarse paste. Drizzle in a bit of extra virgin olive oil and lemon juice to achieve your desired consistency, then set aside.

For the tuna fillets, heat a grill pan or skillet over medium-high heat. In the meantime, remove the tuna fillets from their oil and pat them dry with a paper towel. Season the fillets lightly with salt and pepper and then grill them for about 2-3 minutes on each side, depending on the thickness, until they are seared on the outside but still pink in the centre.

To serve, place the grilled tuna fillets on a serving plate. Top each fillet with a generous spoonful of the sun-dried tomato and olive tapenade. Garnish with fresh parsley and drizzle a bit more extra virgin olive oil over the dish for added richness.
