Traditional balsamic vinegar of Modena is the result of the particular characteristics and variety of grapes grown in the Modena area and is obtained from an aging process of at least 25 years. This vinegar has a dark color and a smooth syrupiness. It is characterized by a fragrant, complex but well-blended, persistent scent. Its flavour is sweet and sour, with an appreciable acidity.
